The red grapes are de-stemmed, pressed and left to macerate at a controlled temperature for about 7 days, during this period a fermentation process takes place while the grapes are in contact with the skins. After the primary fermentation the wine is decanted and the skins are further squeezed to extract the residual juice. The wine is then filtered and left to mature for a certain time. |
